On the surface this doesn't seem to hard. I've got 2x10 SRAM xo shifters and avid single digit 7 levers. It is as simple as swapping out the shifters and levers?

I'm guessing potentially getting new housing? Any advice is appreciated!

Thanks!

Being a frugal SOB, I've used all sorts of hand me down mtb parts on my flat bar road/commuter bike over the years. Disc setups and Cantis. Most work fine as long you keep your drivetrain all SRAM or Shimano, there can be different ratios there. These days, I run mtb shifters, mid cage RD, and cassette, Road FD and triple crank. No great plan, I just like the wide range of gearing for those dirt excursions and those were the parts I had or could source cheap.

Throw it on and see how it runs.

And yep, new cables and housing while you're at it.

I believe 10 speed SRAM road and MTB rear derailleurs are compatible. I've always read that MTB and road front derailleurs are not - although with a double crank both limits are set with the H/L screws so I would think it would work. The levers are not compatible with road brakes but with the speed dial you might be able to make them acceptable.
