Is there a standard length chain for mountain bikes? If so, what is it?
If not, how do you know what size chain to get for a given frame, assuming there isn't an old one to measure?

There is no 'standard' chain size that will fit all bikes.
All chains come in the same length, you just trim it down to the proper length with a chain breaker when you put it on your bike.

No, there is not a standard length since different mountain bikes have various chainstay lengths and cassette and chainring configurations. To save myself the writing, here is a link to SRAM's chain installation instructions:
