Wondering if I build a new wheel set if I can use a Sram 10 speed cassette even though I am running everything else Shimano XTR including chain?

They are the same spacing so in that aspect they are 100% compatible. Chain wise I don't know but I'd guess it'll work fine and certainly better than Shimano would lead you to believe.
