I wouldn't suggest switching to tubeless just for weight savings. In practice it is about a wash. The sealant required weighs pretty close to a tube.
The main benefits to tubeless are to allow low tire pressures without pinch-flats (to get more grip) and so that any holes will self-seal on the trail. If these aren't particular valuable to you I'd stick with tubes since setting up and maintaining tubeless can be a bit of a chore.

Having said that, unless the tires and rims are labelled as tubeless ready (sometimes denoted as TR or TC or TL Ready) or UST (Universal Standard Tubeless) I wouldn't bother attempting.

You could - we made tubeless tires before they were a thing. However, that's not where the weight is on the bike. Heavy steel frame, steel bars, steel stem, steel seatpost etc. You need to look at the likes of Pello or Isla bikes for lighter frames than most kids bikes.
