Im looking at some used bikes to get started and have found three im considering buying.
one is a older specialized fsr with xt components for $250.
The other is a K2 proflex 3000 Carbon fiber rear suspension for $170
and a KHS FXT Trail full suspension, X101 rims front and rear , tioga tires .New tektro brake calipers.Grip shift 21 spd. all shimano shifters / derailers.$175
Any advice or opinions on these would be a great help.

My instinct is that the Specialized is the best choice. They're a common bike, so finding service parts should be relatively easy, and XT is a really nice group.

However, fit of each bike and the condition of each bike is a concern too - if the Specialized is a bad fit, or everything on it is really chewed, one of the others might be a better choice.

How "old" is the FSR? Regardless... as long as it's a good size for you, and the rear shock and the drivetrain aren't completely shot, that's not a bad deal. That's about as low a price a decent bike will go.

I'd stay away from 10-year old carbon. Don't know much about KHS but after some brief googling I'm not digging that FS design. Looks bouncy, and heavy.
