Hi,
I am building up a budget bike and I am researching brakes. Has anyone tried the nashbar mechanical discs? Would I be better off with a set of v-brakes? I will be mostly just riding singletrack. It is a lightweight hardtail.

I'd skip the Nashbar's - look like Tektro's or whatever the bottom of the line mechanicals are called. Nashbar has Deore Mech's @ 44.95 each which would be a better route. I don't even consider v-brakes any more budget or not.
