Never been to Las Vegas before, but have to go there on business coming up in late January.

Wondering about extending the stay to spend a couple days riding Bootleg. Not knowing anything about the weather and other factors, I thought I would ask the locals. Any advice is greatly appreciated

Should be good weather unless it rains. About 55-65 degrees during the day.

It never rains very long here. If the weather guy predicted no rain every single day of the year, they would be right 95% of the time. Just bring some cold weather gear just in case, riding at Bootleg is best during and just after it rains.
