Would taking a bike with 4 inches of travel as stock, would it be a bad idea to upgrade to a fork with 7 or 8 inches of travel?

quite simply, yes.
the frame isn't designed to handle the kind of forces that much more suspension will generate.
it will change the handling significantly.

I don't think changing the travel an inch would have any effect, but to go from 4inches to 7 or 8 is really bad...you wud have to change ur bike a lot.
