Hey I got some new wheels the other day (deore hubs laced to sun S.O.S. rims) and they are drilled for presta. I would like to run shrader but would like to know if it is ok to just find the right size drill bit and simply drill a bigger hole.

I'm no expert, but I play one on the interweb, BUT, I have a set of rims that were originally drilled for shraeder and I use presta tubs on it. I wouldn't think there would be any issue about drilling them out with the correct bit.

After doing it, I would make sure to SERIOUSLY debur the hole, taking the time to round the inside edges of the hole (towards the rim)

go for it, people do it all the time. but like shiney said, make sure you debur.

Your LBS probably will have a ream tool that's real easy to use. I've been using one on my rims for years.
