I'm building up a light trail / commuter bike and would like to know if I should keep the 8 speed cassette thats on the wheels now or switch to a 9 speed set up so I have more choice in parts.

If I go with the 9 speed set up what do I need to do to the cassette that's on there now? Is it just a matter of switching them?

Keep it 8-speed. No good reason to go to 9.
8 and 9 speed cassettes require different shifters. No other changes needed.

You'll need different chain for 9 speed too.
