I'm rebuilding my wife's bike, it's a 4900 trek it came with a 8 speed rear casette and I want to install some new cranks, is there such a thing as 8 speed cranks our does just not matter?

The number of rear gears does not have any affect on which cranks you use.
Are you wondering about cranks, or chainrings (the gears that attach to the cranks)? This has the feeling of crossed-wires...

No problem. Cranks are the arms, chainrings the gears, together they are the crankset.
Most chainrings are designed to work well with a 9spd chain because they are narrower than 7/8spd chains. They'll work fine with an 8 or 7spd, though. For what it's worth, the Everything Drivetrain forum is probably the best place for crank/ring-related questions (you'll get more 'hits').
