29er tyre clearance in fat frame?

Alright, so I've decided I am going to build up a fatbike. I know that most of you run the fat tyres year round, but I would still like to know what the possibilities are for running 29inch tyres. Can you only fit something like a 2.1, or is a 2.5 possible as well? I'm mainly talking about frames like the fatback and the sandman (I'll contact sandman directly), so frames with 165/160mm spacing in the back.

Wildfire spaces their frames at 162.5 so you can run either a 160 or 165.
You would only want to run the 160 if really like a certain 160 hub and don't mind sacraficing some gears.

All of these frames are built around clearance for an endomorph which is taller than some 29 tires, so you should not have any problems.
I am thinking of exactly this same concept of bike for my next ride, whenever that may be... Something nice, reasonably lightweight in overall class, and would likely run 29" on it part of the time, but might want to do some fat front riding and have a set of wheels for even road/touring. Sort of "One Bike" to do everything with. Probably run SS most of the time, with the option for gears...
