If you look at the sizing measurements for the Trek Remedy 2019 is has two columns for each from size, one for high geometry position and one for low geometry position. What is the geometry position?

The Remedy (and most if not all of Trek's full suspension bikes) has a flip chip that allows you to select a low or high position. This results in the changes detailed on that chart, depending on where the chip is.

I have a 2019 Trek Remedy 8 and have always just left it in the low position as it came from the shop. What would be the difference and the pros/cons of switching it to the high position?

Basically the low geometry give you more slackness in the head tube angle and the bottom bracket is lower - better stability (lower center of gravity.)
High position give you a steeper head tube angle makes the bike turn a little quicker and also the bottom bracket is higher so you have better peddle clearance.
