I did a search and cannot find anything, not even on Google, about what settings to use for this shock. I got it used without any user manuals. Does anyone have suggestions as to how much air to use with their particular weight? I run about 180lbs with gear on, so I could just go with that and work my way up or down from there. Which is what I will do if I cannot find any suggestions.

There is no flat correct settings because all bikes are different. Set it so it sags about 25% to 30% with you just sitting in a static riding position and adjust to suit from there. I would say that you should be using most if not all of the travel on a vigorous ride. If you're not, soften it a bit and see how you like it.
